Xiao Xue (Minor Snow)

When the sun reaches the celestial longitude of 240 degrees on November 22 to November 23 each year, the solar term of Minor Snow (Xiao Xue) begins. Minor Snow refers to the time when it starts to snow (mostly in China’s northern areas), and the weather is dominated by the prevailing northerly wind. Although the days of Minor Snow aren’t the coldest period, considering fairly gentle days, it reminds people to put on more layers.

Chinese cabbage once played an irreplaceable role in families’ diet in the north. Forty years ago, food was less abundant in winter than now, with Chinese cabbage one of the few vegetables that could be eaten throughout winter in the north. During the days of Minor Snow, families would store Chinese cabbage for winter. The methods of cooking the vegetable include stewing, frying, and pickling, which offer abundant choices and different tastes. Storage Chinese cabbage in winter has become unforgettable memories of northern China.
